Mother’s Day Breakfast In Bed

The backbone of most families, mothers make our lives and world so much better. Mother’s Day is a special time of year that we get to shower our mom, grandma, or the mother of our children with appreciation for all her hard work, sacrifices, care, and love. And what do moms want more than anything? Hint — it’s not a bouquet of flowers or a card. Rest, relaxation, and a little pampering! Breakfast in bed is a time-honored tradition to let her start her day on the right note. Here are some healthy and delicious recipes to give your favorite lady a little bit of what she’s given you for so long.

PRETTY IN PINK AVOCADO TOAST

Here’s a twist on avocado toast with added color and antioxidants. Toast a slice of bread of your choice, then combine the following:

1/2 avocado
1/2 tsp lime juice (or juice of half of a lime)
1 tsp Organic Beet Juice Powder
Pinch of salt
Pinch of black pepper
1/2 tsp of extra virgin olive oil
Desired veggies to use as toppings

Mash up the avocado with all other ingredients. Top toasted bread with mashed avocado mixture. Drizzle with olive oil and sprinkle with desired toppings. Spoil mom with this heavenly tasty toast.

BERRY LOVELY PARFAIT

1/2 cup rolled oats
1/2 cup pomegranate juice
1 tsp Organic Berry Power™
1-2 tsp raw honey (or to taste)
1 can coconut milk
3 tbsp chia seeds
Toppings: fresh berries, granola, nuts, seeds, or coconut flakes

Add the first 4 ingredients + ½ cup of the coconut milk to a mason jar and stir. In another container, mix the remainder of the coconut milk with the chia seeds. Refrigerate both overnight. Layer the oats and chia mixtures together and sprinkle on the toppings of your choice. Pamper mom with her scrumptious and pretty parfait.

RISE & SHINE SMOOTHIE

1 1/2 cups coconut milk (or milk of choice)
1 banana
1 ripe pear, cored and sliced
1 orange, peeled and seeds removed
1 cup spinach
1 tbsp Organic Freeze-Dried Nettle Leaf Powder

Combine all ingredients in a blender. Blend on high until smooth. Add more coconut milk for desired consistency. Pour into a tall glass and serve the green goodness to mom immediately.
