Breakfast is the most important meal of the day for many reasons. It jumpstarts your metabolism and helps you burn calories throughout the day, gives you the energy you need to get a move-on, and helps you stay focused at work or school. Ideally, we should try and incorporate as many vitamins and nutrients from healthful foods like fruits, vegetables, and whole grains into our morning diet as possible. Here are some super simple recipes to help you start the day off on the right foot.
1. TOAST REINVENTED
Why not introduce some veggies to your morning toast? Whip up a savory version by using whole grain bread, smashed avocado, sliced tomato, and a drizzle of olive oil, herbs and salt and pepper. Avocado is a great brain food to start your day — with healthy monounsaturated fat and plenty of fiber.
2. THE CLASSIC
The all-in-one smoothie is still the perfect go-to to kick off your busy day. You can throw virtually any fruit or veggie together to create a healthful, delicious blend. 1/3 cup organic Greek yogurt or coconut yogurt
1/2 cup (heaping) rolled oats (gluten-free if needed)
2/3 cup unsweetened milk of choice
1 Tbsp chia seeds or ground flax meal
1 tsp vanilla extract
Pinch of salt

1/4 cup raisins
1 tsp ground cinnamon
Whisk together all ingredients in a medium-sized mixing bowl. Spoon into a jar with a tight-fitting lid. Close and refrigerate for at least 4 hours, but preferably overnight before eating.
